Berber Vegetable Tagine
A simple, vegetarian version: carrots, courgettes, turnips, potatoes, slow-cooked tomatoes, olives, and argan oil. Eaten the Berber way, with bread instead of cutlery.
Amlou
A spread made from almonds, argan oil, and honey; a 100% Souss speciality. Enjoyed for breakfast on wholemeal bread. Expect to pay 60–120 MAD for a 250g jar from cooperatives.
Grilled Aftas-style Fish
Catch of the day (sea bream, grouper, sardines) grilled over charcoal in beach shacks. Found in Aftas (Mirleft), the port of Agadir, and Imsouane. Expect to pay 80–150 MAD per person.
Berber Mechoui
A whole lamb roasted in a traditional underground oven, a speciality for weddings and festivals. It needs to be ordered 24 hours in advance at certain inns in the Anti-Atlas.
Argan: The Liquid Gold of Souss
The argan tree grows only here, between Essaouira and Guelmim. The culinary oil (roasted) flavours tagines and salads. The cosmetic oil (unroasted) is used for face and body care. Buy only from certified cooperatives: fakes are common in the souks.
